Spring delights us with lots of treats – fresh flowers, beautiful views, warmer temperatures... your taste buds deserve a treat too! Try this recipe from Board & Box at your next dinner party.

Ingredients 

Butter 200 grams
Caster Sugar ½ cup
Vanilla Essence 1 teaspoon
Standard Grade Flour 1 ¼ cups
Dutch cocoa powder ¼ cup
Cornflakes 1 ½ cups
Whittaker's milk chocolate 125 grams (Half a block)
75 grams (Quarter of a block) for topping
Walnuts (optional) 8-12

 

Method

  1. Preheat oven to 180°C bake. 

  2. Line a large baking tray with baking paper. 

  3. In a large bowl, beat butter, caster sugar and vanilla until light and fluffy.  

  4. Sift in the flour and cocoa. Stir until mostly combined, then add the cornflakes and chopped Whittaker's chocolate and mix well.  

  5. Scoop out 8-12 tablespoon sized balls, roll them and flatten a little with your hand and lay them out on your baking tray. Bake for 12-15 minutes, until biscuits are just firm to the touch.  

  6. Leave on trays for a few minutes, then move to a baking rack to cool completely.  

  7. When Afghans are completely cool, melt Whittaker's chocolate in a small bowl in microwave at 20 seconds at a time until melted and then spoon little circles on the Afghans. Top with walnuts and allow to cool for chocolate to harden or for fast setting results place in freezer for 10-15 minutes.
