Let’s Cook - Boysenberry Cheesecake from The Library Café

Boysenberry Cheesecake from The Library Cafe.
This adaptable recipe is sure to become a favourite! You can change this recipe to suit any occasion or taste and use it to build your reputation as a cheesecake connoisseur.

Ingredients 

Butter/Margarine 200 grams
Crushed biscuits of choice 2 cups
Cream Cheese 250 grams
Cream 600 ml
Condensed Milk 395 grams
Vanilla Essence 1 teaspoon
Cold Water 125 ml
Gelatine 3 teaspoons
Boysenberries 1 can
Boysenberry Jelly Crystals 1 packet

 

Method

  1. In a microwave safe dish add half cup of cold water and mix in gelatine and allow to bloom.
  2. In a separate dish mix the jelly crystals with a quarter cup of boiling water and stir to dissolve the crystals. Add a quarter of a cup of cold water, mix and set aside.
  3. Melt the butter and combine with biscuit crumbs. Press firmly into a spring form tin. (Tip: line the base with greaseproof paper for ease of removal). Refrigerate while prepping the filling.
  4. Place gelatine mixture in the microwave for 30 seconds and set aside.
  5. Whip the cream and set aside.
  6. In another bowl mix the cream cheese, vanilla, and condensed milk. Add the whipped cream and fold into the cream cheese mixture and then add in the gelatine. Pour half the mixture into the prepared tin and reserve a cup full.
  7. Add half the prepared jelly and some of the berries (crushed) to the remainder of the cream cheese mixture. Spoon the mixture gently to allow a layer to form on the white layer.
  8. Mix the remaining berries with the rest of the jelly mix and gently spoon on for a jelly layer on top. Refrigerate 4 to 6 hours or until set.
  9. Once the jelly has set, place the reserved cup of cheesecake mix into a piping bag and decorate the top accordingly. Garnish with fresh berries and/or whipped cream.
